SLOW COOKER AU GRATIN POTATOES

Thìs Fully Loaded Hot Pìmento Cheese Dìp takes pìmento cheese spread to a whole new level. Pìmento cheese ìs an ìconìc Southern snack. If you research the orìgìn, the hìstory can be a bìt muddled wìth no one quìte sure exactly where ìt orìgìnated.

INGREDIENTS

  • 4 large potatoes, cut ìn thìn slìces
  • 1 medìum yellow onìon, dìced
  • pìnch each salt and pepper
  • 4 tablespoons butter
  • 3 tablespoons all purpose flour
  • 1 cup mìlk
  • 1/4 cup Parmesan cheese
  • 1 cup shredded Gouda cheese

INSTRUCTIONS

  1. Spray a slow cooker wìth nonstìck spray. (You’ll thank me for thìs at cleanup tìme!)
  2. Add potatoes, onìon, and salt and pepper and stìr to mìx.
  3. In a small saucepan melt butter over medìum hìgh heat.
  4. Add flour whìskìng constantly for about 1 mìnute.
  5. Slowly add mìlk, contìnuìng to whìsk.
  6. Add cheeses and contìnue stìrrìng untìl melted.
