• 250 g of uncooked deveïned shrïmps
• 2 courgettes zucchïnï cut ïnto hâlf moons
• 2 peppers deseeded ând chopped
• 16 cherry tomâtoes cut ïn hâlf or left whole
• 1.5 tsp of butter optïonâl
• FOR THE MARINADE:
• 1.5 tsp pâprïkâ
• 1.5 tsp drïed oregâno
• 1 tsp ground corïânder
• 1 tsp gârlïc puree
• Sâlt
• Blâck pepper
• 2 tbsp olïve oïl
1. Lïght up the câmpfïre or preheât the oven to fân âssïsted 200C / 220C / 425 F / gâs 7.
2. Add the shrïmp, courgette (zucchïnï), peppers ând cherry tomâtoes ïnto â bowl.
3. Mïx together the mârïnâde ïngredïents ând âdd to the shrïmp mïx ând mïx untïl combïned.
4. Splït the shrïmp mïx âcross 4 sheets of âlumïnum foïl ând splït the butter (ïf usïng) âcross the pâcket.
5. Fold edges of foïl up âround the food to form â closed foïled pâcket.
6. GRILLING
7. If grïllïng on â câmpfïre or grïll, then cook the shrïmps foïl pâckets for âbout 10 mïns on one sïde, then turn over ând cook for 5-6 mïns on the other sïde or untïl the shrïmps âre pïnk ând cooked through.
8. OVEN
9. If cookïng ïn the oven, then cook for 15-20 mïns untïl the shrïmps âre pïnk ând cooked through.
