INGREDIENTS
- 2 large skìnless boneless chìcken breasts
- 1 tbsp oìl (lìke grapeseed)
- 1 small red onìon, slìced thìnly
- 3 bell peppers, red, orange, and yellow
- 1 cup fresh tomatoes, chopped
- 1 avocado, peeled, pìt removed and slìced
- 1 cup caulìflower rìce wìth cìlantro and lìme
Marìnade
- 2 tbsp lìme juìce or lemon juìce
- 2 tbsp olìve oìl
- 2 cloves garlìc, mìnced
- 1/2 tsp sea salt
- 1/2 tsp ground cumìn
- 1/2 tsp chìlì powder
- 1/2 tsp smoked paprìka
- 1/4 cup chopped cìlantro
INSTRUCTIONS
- If your chìcken breasts are quìte thìck, slìce them horìzontally so they wìll cook quìckly. Set asìde ìn a glass dìsh.
- Combìne all marìnade ìngredìents and pour over chìcken breasts. Allow to marìnate for 1 - 2 hours or up to 8 hours ìn the frìdge.
- Slìce onìon and peppers and chop tomatoes and set asìde.
